Sous Vide Beef Tongue?

Has anybody done a beef tongue sous vide? If so any tips or suggestions to try. Thinking about making this one of my next projects and looking for ideas and flavors.

(tacos). Turned out great, although I would cook for less time next time (and/or experiment with lower temps) - I went a full 48 hours at 170ºF, and it was extremely tender and flakey.

Treat it like corned beef, corn it then SV it (try 70°C/24hr) and it turns out great.

70C/24 is right around where I did mine. I was making tacos so I brined it in a 1.5% salt brine with the adobo sauce that comes with chipotles and some oregano, garlic, and bay leaves.

So are you saying you cook it in the brine with the adobo and other ingredients?

Yeah I did, you could take it out but I was lazy.
