Burger Classes - question about Amylase

Can i use Alpha Amylase (used in alcohol brewing) in stead of Amylase ure using in classes?

havent done the burger class, what amylase they calling for?

They are just calling for "Amylase" in the bun recipes. The question was asked in the discussions but wasn't specificaly answered. From what I can find it seem that Alpha Amylase is the one used in baking. (Chris referred to fungal amylase at some point)
