i just got a cryovac machine and I love the possibilities. I am looking for some ideas from anyone on what successes with protein infusing as well as fruits and vegetables. If this helps, I am using the sous vide method to cook most proteins.

for ideas, - Not sure how much you can do with proteins besides brines and such. Flash pickling is great, custards (french toast) is fun. Prepare to eat a lot of melon!

I echo Johan's comments here! Also, see the link he posted and explore. Watermelon and soy sauce (then smoke it). Flash pickling is a serious unsung hero (just did some sweet onions for a coleslaw this evening). Explore with what to do with the foods AFTER you infuse. Like the watermelon (compress it then, roast it for 12 hours, freeze and dehydrate ala Mugaritz). Once you start with the compression do it a few times and ask yourself "what else can I do with this now"........and be prepared to be amazed (and disgusted if the test doesn't go as hoped :-)...).
