Storing Activa

Hi,

I've been wanting to do something with activa rm for a while now, but it turnes out to be kinda hard to get over here in germany. Apparently german shops aren't allowed to sell that stuff to private customers for whatever reasons. I could order from modernist pantry, but that basically doubles the price due to shipping and taxes/customs so i'd rather not.

I found a supplier in the netherlands where i can get for a reasonable prive with free shipping, but only at 1kg.

I know that activa goes bad rather quickly once exposed to oxygen, so my idea is as follows: Once i open it up for the first time i weigh it out to say 50g portions, individually vaccumseal them (i do have a chamber vac in case that matters) and freeze them.

Do you guys think that will work? and what kind of shelf-life can i expect that way? I don't the myself goging through that much in less than a year.

Thanks for your input, and if you have a better idea, please tell me.

I store mine in the foil pack it comes in which is inside a ziplock bag in the freezer. I lasts for a long time that way. If you vacuum pack it should really last. A kilo is a bunch of MooGlue. 50 grams is probably a good package size. However, when you start using it you will find so many things you can do. Yesterday I put 2 pork tenderloins in an equilibrium brine with Jerk seasoning. This morning, at the last minute, I decided to "glue" them together fat end to thin end. At the last second i fried some bacon and layered it between the 2 pieces, glued it up and vacuum packed it.

Can't answer your questions (sorry), but may be able to offer to send some on my next trip in a few months. Will likely stay in Bad Bentheim again just inside the border and would be able to mail from there. It packs light so should be ok. If interested, let's keep in touch.

I just placed the order for 1 kg. After i've got it i'm gonna devide it in 50g portions, vacuum deal and store them in the freezer. I'll let you know how that works out.

Arrived today. Yesterday actually, but i wasn't home.

I ended up doing 100g packages, seemed less logistically challenging, also i was supprised how much more space 10 100g packs take compared to 1 1kg pack. so i guess 100g should be ok. also i guess i can reseal each back like 4-5 times before i run out of spare bag, and than i can just use a new one. I just glued together 2 chicken breasts just to try it, and i grossly overestimatet the amount i'd need. Had to chuck about 1 tbsp because i had already resealed the bag.
