I love me some durn sous vide chicken wings! I cooked the wings in the SV at 170F for 4 hours.I removed them from the bag, dried them off and placed on a rack for an hour or so. I finished them off on the Weber using a product called the Vortex. It goes in the center of the grill to create your hotspot...you get the idea. Once they came off the grill I dunked them in a sweet and spicy sauce I made from pineapple, brown sugar, soy sauce, Tiger sauce. I'll definitely be making these for the Super Bowl.
