36 hour pork belly, compressed apple, pickled mustard seed, radish, balsamic garlic cream, maple jus.
Homemade ricotta and egg stuffed ravioli. Lemon brown butter sauce, toasted pine nuts, rosemary, parmesan.
Sirloin 130f. Pretorched then finished frying 30 seconds each side. Garlic sautéed morel, horseradish cream, thai chili gremolata with lemon and mint, panko fried bone marrow.
Cinnamon Salted Caramel Ice Cream. White chocolate caramen popcorn, peanut brittle.
Overall really pleased with everything. Coulda gone a few more minutes on the belly for extra crispness. Woulda liked to use warm plates for the sirloin but the horseradish cream immediately started to melt (duh). Also was a bit intoxicated by the time we got to dessert so didn't bother with trying to quenelle. Not gonna lie the fried bone marrow was life altering.
