vegetable ash?

Is anyone making ash from vegetables or other items, i have seen this ash mixed with TG glue and it adds a pleasant look and some kind of flavor. is there some trick to making "ash" or am i looking too far into it?

Some form of onion ash seems to be everywhere at the minute.
It does look great though, and if used sparingly adds a really enjoyable bitter/charred note to dishes. Just burn the shit out of leeks in the oven, cool, and then blend into a powder.

I like to blend it with other spices so that the bitterness isn't as pronounced and it makes things taste kind of roasted. Really nice with vegetables

I always add a pinch of salt to my finished ash to help reduce some of the bitterness. I usually char my vegetables (or whatever, carrots, sweet potatoes, leeks, hay, pine needles ..) directly on hot embers. Then finish drying/roasting out the remaining water in the plant cells on trays in the oven. From there you can proceed and usual; Puree/grind, Sieve, then do whatever... blend with spices, rub on proteins, cheese, charcuterie..... Theres no real trick that I know of.
