Microwave cake/sponge recipe

Hello,
I'm trying to get my head around the siphoned microwave cake recipe by Albert Adria. I'm hoping to change up the flavors of it and wondering how I might accomplish this goal. I would like to try a pea flavored sponge to start. Would I need dried peas that I powder or would I use a pea puree? Is there a standard recipe that works where I can add flavor to a wet stage or dry stage? I was reading the recipes in MC at Home and each one was different so I couldn't grasp where I could experiment with different flavors and make sure that the sponge came out with the same texture every time.

— I would blend up freeze dried sweet peas if you can get those. Then blend them in at the dry stage, maybe replace as much as 10–20% of the flour with the ground "pea flour"
