Wow, that looks awesome. I love the idea of the cauliflower "croutons". I've been trying to come up with ways to cook cauliflower and this just might do the trick.

Was curious about the tomato. Hadn't seen that. I figure its probably similar to adding squid ink or spinach puree?

Yeah. When I do tomato pasta I usually sub out a portion of the liquid for a concentrated tomato paste and it works well. I have also seen people buy powdered vegetables to add to the dough which can be bought online.
