I like the idea of putting some veg in the bag. How did it effect the flavor of the beef? Did the onion break down any seeing how the temp of the sous vide was only at 170?

i thought it worked very well. we ended up with a lot a sauce with robust flavor it enhanced the beef taste. 2) yes, the onion got soften a bit but it was the combination of all the flavors that did the trick.

Thanks for pointing out this recipe. I've been meaning to look up a sous vide beef tongue recipe, didn't realize Kenji had one.
BTW, if you have a gas stove, I'd highly toasting the tortillas over a medium flame, it softens them nicely and adds another layer of toasty flavor. I usually toast for 10-20 s per side, shifting them every few seconds so they don't burn, then hold them in a folded cloth towel to steam while I toast the next one. They should start to relax when they get warmed through, keep an eye out for smoke. (You want tiny bits of black or brown on at least one side.)
