Sunchoke hash

Breakfast this morning. I decided to use the rest of the sunchokes I had left over from last night. roasted sunchokes, bacon bits, parsley, sambal, soft boiled egg.

I rendered the bacon so it would be crispy, but they got a little on the dark side. Not burnt, but dark.. : (
