Mock Turtle Soup

I'm going to treat my parents to a fantastical dinner at my place for christmas. I want to make this soup. I don't happen to have a Genevac Rocket, but can I just reduce it the conventional way? I understand it will change the flavor of the stock, but it looks to be my only option. And any one have any ideas of the rest of the components, mostly the turnip mousse. I'm thinking high, low, gellan and gelatin like the bone marrow custard.

You might try the following:
(1) Prepare the stock
(2) Ice filter it--critical because it removes the gelatin at this stage, which otherwise will become too concentrated.
(3) Reduce the ice filter stock until very rich. Season, and add a measured amount of gelatin to the reduction (12% of 160 bloom gelatin relative to the weight of the reduced stock).
(4) Set
(5) Wrap in gold leaf.
