did you just steep popcorn in milk then use that cream for the Pot de Creme? I'd love the recipe if willing to share.

Me too - I've tried a few popcorn infusions but haven't really ever been wowed (never popcorn-y enough for my tastes). I'd be curious to hear about the method/ratio you used if you don't mind.

Sorry for the late reply. Yes I sure did! I oil popped 1/2c of kernals and added some salt to taste and about 3-4 tablespoons of butter. I had to try this twice to get it to work right. I used roughly twice (a bit less) the amount of cream in the recipe for this amount of popcorn. The first time I tried it, the popcorn absorbed all of the cream! Pop the popcorn, heat the cream and then dump the cream on the corn (it will shrivel instantly). This should leave you with enough cream for the recipe. I think the addition of complementary flavors is really important. In this case the caramel hearkened back to caramel corn which helped to punch up the popcorn element. I will say having had some popcorn ice cream, I haven't been super impressed every time. This one really had the right flavor for my taste. I hope it works great for you!
