I'd guess, mind you just guessing around 15-20 minutes depending on size of the rack.

There is a recipe on this site that describes cooking a rack of lamb in a 175F oven. This is like the slow roast prime rib I guess, as opposed to a fast 20 minutes at 425F. The recipe only talks about cooking to a specific internal temperature, which is pretty obvious. For planning purposes I'd like to get an idea on how long it will take to get to 125F internal.

I'd guess around 2/2.5 hours. Total guess and it depends on the size of the rack. Use a probe.
Be sure to sear afterwards, nappé the sucker with butter.
