we had a dinner party for february 1st, the day of the chicago blizzard and the super bowl. we had our dinner first and watched the recorded half time super bowl show just before the dessert course. one of the guests made the beautiful flower arrangements. thank you carolina.
1. olive dirt pot
a pot of gribiche topped with dehydrated olive and planted with carrot and asparagus
2. umami martini blast
this course focused on a warm broth that was packed with umami flavor
3. squid + shaved white asparagus
with squid ink vinaigrette, tangerine, and celery leaves
4. gnocchi
sauteed in saffron butter sauce in a crispy potato skin broth
5. beet risotto
uses beet juice, pickled beets and stem, beet leaves with a side of dehydrated golden beet chips
6. coffee butter steak + spinach
and a tart cherry swirl
7. rooibos tequila tea + chocolate truffle + edible raspberry sorbet lipstick
