
I know this is a blog where you're supposed to show your creations. Just thought I'ld show their effects. My daughter showed up out of the blue today, and I had nothing ready except for the pommes purées. Told her they were the best I had ever prepared. Made some cranberries and a lamb rack at 79°. She more or less overate herself, but she just couldn't stop eating the pommes purées. For those of you wondering how long they keep : these were three days old, kept them in a bag in the fridge, reheated them in a water bath, and felt a little guilty about the butter washing up on top. Mixed it all together again, and they came out like the velvet white gold they are. thank you chefsteps
