Considering in making miso ramen this weekend with Ener-G Baking Soda replacement. I've read that you can use regular baking soda to cook thin spaghetti noodle because of the alkaline in it. I'm trying to avoid this because of the high sodium content in regular baking soda. I did some research and found this Ener-G Baking Soda substitute, however the ingredients do not contain alkaline; Calcium Carbonate, Magnesium Carbonate. And it says you would need to use double the use of regular baking soda. Will this work? If not, does anyone know of any low sodium or sodium free alternatives?
