Nopales Challenge

Hi! i was told by my chef to use nopales as a component on my dish. i need help with coming up with a recipe or just an idea on what's the best thing to do with it?? impart flavors and make the nopales interesting.

i'll post a picture next wednesday after i test out my idea.

I marinate mine at least 24 hours in:

120g lime juice

120g vege oil

24g toasted whole cumin seed

15g salt

212g Chipotle in Adobo (I use a 198g tin of the San Marcos salsa puree. You get 212g and it is cheaper than the whole chipotle.)

Then grill. Skirt steak in the above marinate is very good too.

Cook nopales well as it is slimy like okra if not cooked well.

A blowtorch is very good to get the little thorns off and adds a charred flavour.

Nopales with peppers and onions as part of a fajita plate work well.

Get the fruit of the prickly pear cactus, tunas, and serve as well. The seeds put a lot of people off but I like them. If you get the red fruit, puree, strain, set with agar than cut in small dice. Serve with lime juice, jalapeno and salt and you have tuna tartar that tastes like a margarita.
