Thought I'd post this here, I made it as the starter for a Valentine's dinner. I love this soup and its so easy. Apparently this is how they make the soup component of the 'English Pea' dish at Alinea.
500g petit poi (frozen)
Maldon sea salt
1. Blanche the peas in boiling water for 90 seconds, just until defrosted and sweet.
2. Drain peas, keep the liquid.
3. Put the peas into a processor or use a hand blender; begin with 1t of salt and blend full power for 3 mins
4. Start to add some liquid 50ml at a time and continue to blend for at least 10mins
5. Pass the mixture several times to remove all the small solids, at this point you have cold green paint, sweet but not too salty. You can save it here or reheat the soup gently, avoid boiling, checking for salt to taste.
PS: I serve this with a Parma ham crisp, crisped & pressed in a hot oven, broken into strips and left to cool on blue towel to remove excess fat.
