Nice.
Ever tried them sous vide? Mark Miller mentions it in his "Tacos" book. I've tried it once (quite a while ago) and it's pretty good-- the flavor is a little stronger this way, so maybe it's not for everyone.
If I recall correctly, doing it sous vide mitigated the mucilaginous-ness too.
