I have used this recipe at least a dozen times and it works perfectly. I like to use bacon drippings.

The key seems to be the greater quantity of eggs than other recipes.

I like Ruhlman's popover ratio from "Ratio," which is 2 liquid : 1 egg : 1 flour. Season to taste. Since you're making yorkshire pudding, add drippings as necessary. Cook until food.

We must make 150 on a Sunday at work, probably more, 90 eggs worth anyway. Generally 35g of flour and 50g of milk per egg is the best way to go. Technique of cooking way way more important than ratio though.
Use good quality ramekins that retain the heat well, good 1/4cm of fat in the bottom, leave in 200° oven to get upto temperature then fill them just less than half way. Takes about fifteen minutes.

Oh we also make the mix a day before, I have no idea though if it makes a difference.

It should make some difference to tenderness and texture; you'll hydrate the flour and let the gluten relax.

Given the amount of flour I'm not convinced making a day in advance will be any different to an hour in advance.

Thanks everyone! Made the Martha Stewart version last night with the Sunday roast. They came out great. Used a ton of drippings, maybe too many.
