Did the ChefSteps Turkey Crown and Roulade recipe for Christmas dinner...
The odds were definitely not in my favour. I had a dull as hell knife with no stone for miles, a 12" wide roll of cling film and a highly negative mother doubting me the whole way.
I prevailed though. Broke a knife during butchery, had to babysit the Roulade in the finicky water bath for 3 hours (as I whacked back a few Bourbons) and set the fire alarm off while browning it (mom yelled at me to turn the fan on. I said 'The fan is on!...Gad!').
I also made my own gravy by browning the bones, adding shallots, white wine, homemade turkey stock, beurre manie, MSG and lemon juice.
I sliced the Turkey up, brushed everything with clarified butter and sprinkled it with thyme and Maldon Sea Salt.
... It blew everyone's minds. Even mom's.
They almost spat out what was in their mouths, however, when I told them I used 'Meat Glue.' I was prepared though, and cited all the facts and science which allayed their fears.(I didn't mention the MSG...babysteps) They couldn't believe the flavour!
Thanks Chefsteps team for the recipe and helping to make the best Christmas feast to date! Next year I have carte blanche on what to make for Xmas dinner...Bo Ssam? Peking Duck? Pig's Nipple Scratchings?
Whatever I do, I just don't think I'll be making it over at my mom's again...
