A local welding supply center should be able to sell you what you need. The biggest expense is almost always the dewar.

That's a very specific requirement....!

I know a couple years ago Sur La Table offered a 'molecular gastronomy' (ugly term) class, but I think it has long since been ended. Your best bet is the ChefSteps link provided by Todd.
