Pork 23h SV at 59, Skin sliced to diamonds, high grilled for 15 min. Simply perfect! Tempering with the traditional way to roast a Schweinshaxen is close to a religious sacrilege, but the meat was tender an juicy right to the bone, perfect with one word , I even could convince a hard core traditionalist to go SV.

Ritch dish in deed, so a shoot of plum Schnapps was needed for distribution. Several weeks ago I visited relatives living in an area historical known for fruit planting in small and big scale; certainly the area has its certified distiller since ages when people bring their yearly crop in fruits. I was called up by my sister for help on a major house clean up. The house itself is over 100 Years old and generations have lived in it. To make it short my nephew and I found a 50 sealed glass bowl, filled with plumb Schnapps. Calculating the circumstances the bowl could have first end up in the cellar we narrowed it down to 40 Years, sitting there, slowly growing in age and taste just to be found by people who really appreciate good schnapps.
