Went online to find a recipe to make a shopping list, and found this line from John Besh: "All you need is great chicken and great sausage". So I ran with that. Not super traditional, but the market had merguez and linguiça, so they went into the pot, along with Allan Benton's bacon (which is more like pork flavored smoke, so good). Add some Crystal hot sauce and blammo.
