Looks great! How long in the PC and how did the texture compare to SV?

I left it for 20-25 minutes in PC, and the texture was a bit too soft. Next time I would PC it for 10 minutes and leave it on the grill for bit longer. I've never made it SV so I don't have a frame of reference.

Thanks, I live in Florida not far from Tarpon Springs and the sponge docks, we have an abundance of octo and squid here.
