Black Garlic

Anyone have a good recipe using black garlic? My friend just sent me a bunch and I've never used it before.

In pretty much anything you want to turn up the umami to 11 in. It does the same job (and even better if you ask me) as fish sauce or ansjovies. It lends a tiny amount of flavour pretty similar to balsamic vinegar with a subtle (but sublime) undertone of almost burnt garlic.
Use it in pretty much any kind of meat stew (it works literal miracles with a bolognese) or blitz about half a clove into the stock you make a risotto with and get ready to have your mind blown.
Or in the tomato sauce of a pizza.
Or in a salsa.
Or a guacamole.
Or the most mindblowing bbq sauce ever.
I could go on and on and on =P
You can use it pretty much wherever you would use any other umami enhancer. either in its natural mushy form (like a paste) or you could put it in a dehydrator for 48 hours and grind it into a powder.
Think endless possibilities and you're about halfway there.

Recently I made a pizza with a sauce based on black garlic. The sauce was lots of black garlic, sesame oil, grated ginger, lime juice, and soy sauce, all blended up. Topped with shrimp seared in butter and soy sauce. A little bizarre, but pretty tasty!
