Coconut mousse

Hi Chefsteps. I need your help. I want to prepate coconut mousse firm enough to set in hamisphere mold, and be covered with some nice glaze. Yes i know, it's simple, but I want it to be made in a siphon, and I want it to be made without coconut milk nor cream (I don't like that fatness) Any ideas?

I don't know how you'd go about extracting the flavor of the coconut without extracting fat. If you manage to figure that part out, you can try foaming with gelatin and xanthan.

Maybe make almond milk from scratch and use a good quality coconut extract?

I guess you could always buy natural coconut flavoring and use that to make your base.

I was thinking about making almond milk but with cocnut and try something with that OR infusing some whipping cream with coconut flakes.

(Of course I don't mind any fat in desserts but I don't really like that fat from coconut milk.)

Alton Brown has a pretty good recipe for coconut extract that I've made before. Nothing groundbreaking (steep coconut in vodka). I liked it better than store-bought versions I've tried though.

What about (young) coconut water?
