We _love_ the lamb tartare at The Whale Wins and would like to try Renee's recipe at home (her new cookbook is great, btw). Do any Seattleites have recommendations for sourcing fresh, well-handled lamb for use in tartare?
I've visited a few local butcher shops in the past, but haven't been all that impressed - their cuts didn't appear fresher or higher quality than the nicer grocery stores and I'm somewhat suspect of local butchers after the
Bill the Butcher fake organic meat scandal. Maybe I've tried the wrong butchers?
We generally get our meat from Whole Foods, Metropolitan Market, or Costco on the eastside but would drive for quality. I'd love to hear your recommendations
