Ive been to several restaurants where they serve fermented vegetables such as fermented mashed potatoes at the restaurant at meadowood, or fermented beet juice at COI in san francisco, i recently had lunch at can roca and they serve a fermented corn ice cream, I've try searching on the web about fermenting vegetables but haven't found anything, any clues?
