What temp for 84 hrs looks awesome but the time seems a little long I always do 136F for 48 and finish with a super hot sear to crisp the outside.

It was 129F and a blow-torch finish. 72 hours actually suffice in these temps, but my plans changed so instead of lunch I had it for dinner
