Does anyone know of a good source to get small amounts of American Country Ham in the greater Seattle area? I'm talking producers like S Wallace Edwards, Bentons, Newsom's, etc. I'd like to be able to get them in small quantities.

I tried to order bentons a while ago..and it was on a monday...i said i'll have it by saturday right...she almost laughed at me..but she was very nice..she said they were about 4 weeks backed up on production.

If you cant find a good local producer....experiment in making your own from a good local pork shoulder. it takes some curing time and abbout 2-3 months dryin time but its worth it ..and you will possibly appreciate it a bit more. Once you get a basic ratio of "cure" you can change things to fit your likings!

Yes, the wait period and quantity are the problem with ordering online. I'd really love to be able to go into a shop and get a small amount sliced like you can do with other cured meats. For example, I believe the Woodsman Market in SE Portland often has a few available.

Except most hams are on a 3 week+ wait these days due to demand.

The only small quantity packaging i've ever seen for country ham is where they sell it pre-sliced like proscuitto and it's usually not very good. I know that Heritage Foods sells some Edwards bacon and Surry-ano hams in smaller quantities but minimum shipping is $23 I think. Living in Virginia we have a lot of that kind of stuff around us and I never see it in smaller sizes locally. We usually buy it as a group and divvy it up ourselves.

I'd love the same information for the Dallas area as well. Or an internet source for smaller quantities with reasonable shipping costs. Thanks!
