Crispy pig ear salad- pressure cooked pig ears, dehydrated and then deep fried.
Butter poached lobster- sous vide in a bag full of butter. Used the lobster butter to make the mashed potatoes with corn.
Fried sweetbreads- sous vide sweetbreads deep fried, chestnut puree, crispy potatos, and a chicken gravy
Duck confit cassoulet- Sous vide duck confit, beans and homemade sausage
