the platano that i had left from my last dessert was now fully fermented and nicely brown all around so i decided to give the pudding another go. I cooked the platano in the skin with a little open slice where i drizzled some honey in. i peeled it and tossed some brown sugar on it before i gave it a quick torch. I did a banana jam with wich i filled some old fashioned cake base. As a nice smear on the bottom i choose the chef steps traditional ganache
http://www.chefsteps.com/activities/traditional-ganache with that i did some dots of banana cream, yogurt, yogurt powder, some peanuts and a baked banana sorbet. Its is a really good combination and the platano adds another banana texture and flavor.
