I buy dried ancho chilis [other dried peppers too] and [horrors] put them in the microwave for 15 sec intervals.. 30 sec and check/ turn -> 15 sec and check/ turn... etc. Usually 45 sec is enough [the smoke is VERY potent] and let them cool off... they are crisp and crumble into powder -
'chili' powder -> blend or crumble into broth with comino, corn/onions/black beans/ poblanos/ etc/etc [as per this soup recipe] for posole. Dress with white or cheddar cheese/cottage cheese/sour cream/ radish/ beet/cilantro! / sweet onion . try this method of 'roasting' dried peppers at your own risk..! ; )
