Easter dinner......! First a salad made of salad meringue (juiced carrot, asparagus, cucumber and romaine) topped with a dairy free gribiche (used the recent onion puree-rocks!), edible soil of dehydrated olives (ala HB!) and home grown microgreens (posted recently). Had to do something with them :-). Main - Applewood smoked ham with honey glaze, modified pomme pave (infused the cream with gralic, gruyere and thyme) and broccoli puree. For desert......... due to the unplanned chocolate explosion in the kitchen....oops..... a PB+J gelato with cryo-poached marshmallow and raspberry druplets. Happy Easter! The salad (oddly) may have been the hit of the evening.
