Finally served some of the pork shoulder "steaks" that I froze a while back after using the CS "Tough Cuts: Transformed" method.
Definitely a keeper. My wife loved it too!
Served with tomatillo/lager salsa, frijoles borrachos, rice, jack cheese and epazote (w/ tortillas on the side). Fantastic dinner. Plus I have many, many more frozen steaks in the freezer. Good stuff.
