The ego boost for the evening (not shown) was the cesar salad with anchovies .......for people who don't like anchovies (what's life without a challenge), and loved the salad dressing. :-) which also included parmesan cheese and 10 minute aerated brioche croutons. Hand made pasta and garlic basil sauce inspired by Wolfgang Puck. For desert inspired by Alinea a cryo poached chocolate balloon..inside...... cryo poached banana praline meringue, aerated chocolate coffee mouse, surrounded by caramel and chocolate dust with PB&J sauce, cryo fried strawberry and maple syrup fruit leather. The joys of liquid nitrogen. :-) I need a silicone table cloth. :-)
