Trying to make practical weekday meals using whats on hand tends to make things kinda boring... But this week the wife was pleased with some of the dishes which made me want to share.
First night scallops with a pea and brocolli puree, wild rice, and tobiko butter.

next meal was chicken roulade, leftover brocolli stems, and sweet peas, wild rice, and radishes.
The two dishes basically just had different proteins and roe for the scallops and roasted beets for the chicken.
