Marc-Remo Kündig and myself cooked a nice 5 course dinner for our friends.
First course :
Suckling pig (24h SV & Smoked 3h) - MC Garlic Confit - Parsley root purree (bad picture , sorry for that)
Second course:
MC Caramelized Carrot soup - tarragon
Third course:
Oyster-Beef tartar - Lemon - Horseradish cream - Caviar

Fourth course
Quail - Foie gras filling - Red cabbage- Reduced quail

Caramelized pear - Gorgonzola honey ice cream
