This is something i made with a wagyu culotte steak. The steak and 'salad' are both sitting on an onion cream puree i got from this website. The salad has confit garlic, sauteed fiddlehead ferns, roasted shitake mushrooms and roasted hen of the woods mushrooms and roasted brusselkale. Then i took all of the leftover veggies and made a vegetable ash. Sorry for the drip on the plate, moving fast to get it out.
