I am not entirely certain I could eat that. it would be nearly a crime to disturb that gorgeous plate!

Meanwhile, I have been indulging over the summer with chicken Caesar. Chicken Breast cooked sous Vide with about a teaspoon of chicken Caramel and 2-4 Teaspoons of Lemon Confit Syrup (depending on your salt preferences and tolerances.)

When the chicken is done, I dry the meat and slice across the grain in medallions. sear off with a couple of tablespoons of butter and another teaspoon of caramel. once seared, take off the meat and deglaze with the juices still in the bag. there is just enough lemon in there to pull the pan sauce together. reduce to another thick glaze/caramel and use as either a dip or a topping (I like it as a dip).

Serve over the typical bed of Romaine, Parm, Croutons & dressing with the dip. nice summer nibble. lots of hydration and can be served with the meat hot or cold.

Not store bought croutons, man, but the dressing was a bit too sour. I'm learning, though... Thanks for the support.

Wow! Nice to see everyone supporting a young aspiring chef. Who said it has to look just like a classic ceasar? How do you know the dressing is disgusting? Its a picture!!! How do you know the croutons are store bought? Maybe they just have better knife skills then you..... Keep up the hard work Isaac!!!!

Come on guys, he’s trying to think out side of the box and do things differently. Maybe instead of putting down culinary students down for their choices we should support them and motivate them, they are going to be the future of the industry some day. Kid don’t listen to em experiment away!! Learn from both good and bad.

the lettuce is drenched in disgusting dressing the croutons are clearly not house made and are from a box and whats the grey specks of blagghhh surrounding the "salad" at least the lettuce looks crisp
