That looks pretty excellent. It's a refreshingly (for CS) home-style dish / photography that leaves it to the food to look ENTIRELY appetizing. How do you go about making the ragu?

Brown the meat and then rub in tomato paste and pressure cook with carrot onion and celery for 50 minutes on high. Strain, pick meat, reduce liquid and adjust with veg stock and add back some fresh carrot and onion.

By the way: the name means deception for priests

there is also another pasta called strangolapreti (priest choker). These kinds of pasta would kill a priest
