Sure. Sea buckthorn curd(sour nordic area berry which tastes like a citrus and some tropical fruit combination) is made like a regular lemon curd. Except lemon is replaced with sea buckthorn juice. It tastes amazing! For lemon mousse you take a milk, lemon juice, lemon zest, sugar and a bit vanilla and bring to simmer, take off from the heat an leave to infuse for an hour. Pass through a sieve. Whip whipping cream until stiff peak. Heat infused milk, add gelatin. Take off from heat and add whipped cream. Leave in a fridge until ready. Hazelnut crisp is made from roasted, peeled and finely crushed hazelnuts and tart dough. And meringue is an ordinary italian meringue. Easy!

Very nice plating indeed. I have a couple of question regarding the lemon mousse. How did you infuse the milk with lemon juice without it curdling? and when you say "Heat infused milk, add gelatin. Take off the head and add whipped cream" You meant to say that the milk needs to cool down before adding the whipped cream yes?
I love lemon mousse and I'm always on the lookout for new recipes.

Hello I doing a recipe and I´ve tried every lemon mouse recipe but nothing seems to satisfied my need. But yours have the consistency I need. Can you please share your recipe please?
