Savory custard for Sunday

Wanted something a bit different but still savory and luxurious to go with the ribs on Sunday. Played with a Savory Brulee. Caramelized Fennel and truffle custard. Texture is perfect and flavor is nice. Will make a maitake/beef demi glaze to top it and the Ribs.

could you give more detail how you prepared the Brulee, please?

I substituted a portion of the egg yolk and cream with the caramelized fennel and truffle. I tried substituting part of the milk and it was more of a solid gel (and not real pleasant). Realizing the butter that was involved with cooking the fennel, I thought it would be better to replace some of the fat with the puree. Hope that helps. My math is still being worked on as I didn't use any sugar and I'm not certain how much that would affect it.
