I learned two things from this cook. One, I should have listened to the grill. It wanted to stay at 250, and I wanted to see how steady I could keep it at 225.
Two, it's no fun trying to bring up the temp at 11pm in 40 degree rain...
But it was delicious! The kamado joe is a keeper. :-)
