Im finally back in the kitchen (short spans) after hip replacement two weeks ago. Was going Bat Shi+ crazy. Calamari steaks cut into thin strips (next time I will cut the steak in half horizontally for thinner strips). Shrimp, scallops, Butter, garlic, orange zest, pink Himalayan salt....
It needed a little more flavor, some kind of sauce? A Ponzu reduction?
Thoughts?

First thought is miso brown butter sauce. Or just a nice hit of lemon with some fresh chili

Could go a simple olive oil route, the miso route as Brendan suggested, spicier with a harissa. So many possibilities. Like what you did and think there's so many possibilities.

Hi Rob, great looking (and I bet tasting) dish! I think I saw something like this from Michel Richard (Happy in the Kitchen)? How would you go about cutting the steaks in half horizontally? Quasi-freeze and then a deli slicer?

Quasi frozen on a mandolin, I have one that is totally adjustable probably make a flat board with a tiny lip on the back to push it thru..dont have a deli slicer anymore....like a dumb a$$ i sold it.

damn... i had all of that in the fridge...i was was so excited about being able to stand long enough to cook i had brain fade
