My cooking partner and I recently pulled off a 12 course cocoa/chocolate inspired tasting. I posted a pic of cocoa macaroon, chicken liver pate a while ago. The second "starter" was Parmesan churros with a chocolate/mole dipping sauce. Our first seated course was this cocoa dashi, with a slow roasted shallot, seared maitake mushroom, raw mushroom, black sesame and scallions.
