Hey guys,
For any pro's on the forum are there some other sites you guys use for trusted larger batch recipes usable for the professional kitchen? Particularly by weight, like this site has, to be scalable.
I use egullet, chef steps, modernist cuisine and at home so far but most recipes need to be tested and adjusted for scalability.
Are there any other good sites or books you guys like with weighted recipes and reliable flavor judgement from chefs with good palettes?
