Obrigado Afonso! I suppose you speak portuguese too? So for the foam I added methocel in my foam base (beet root juice and spices, balsamic vinegar...), poured into a Isi siphon and added 2 N2O cartridges and placed in my Sous Vide supreme at 60ºC. If you use methocel just take into account that the foam will melt when cooling down.
